Pan de Cristal, or glass bread, originated in Spain. It gets its silky soft internal texture from the extreme  hydration of the dough, at least 100%. Each Pan de Cristal is about the size of a ciabatta and can be used in much the same way, cut horizontally for indulgent sandwiches, or vertically as with any other bread.
